Choke Yer' Dip

Do you ever have days, where you look at your husband and think.... Man, you stupid Dip! I would LOVE to CHOKE you!

Okay I’m just kidding... No, wait, I’m not... I do have those days but none the less that is NOT what this post is about!!!

I am posting a recipe for the Artichoke dip I made... It turned out GREAT!

If you don't know it about me yet, you will come to know soon, I love to cook, and I rarely follow a recipe. So if you follow my blog you will be exposed to many new creations! Also since I rarely follow a recipe, most things can be recreated with a very lose hand and lose measurements. I don’t measure anything so they are approximates. Just be brave and give it a try!

Here is my Artichoke dip which I have called Choke Yer' Dip. Yes I made that up just now, if you don't believe me Google it. It’s not there. I checked!

1 cup Mayonnaise or so (depending on how creamy or thick you like it)
About 10 canned or jarred Artichoke Hearts(or fresh if you have a need to make an easy recipe into a pain in the ass)
Fresh cracked Pepper if not ground is okay..
Salt to taste (not much since Mayo has salt)
Garlic Powder (a few dashes -again to taste)
Cheese - as much or as little as you want, any kind you want, finely grated (or use parmesan)
Finely chopped Red Onion - again as much or as little as you like
Fresh Green Herb(s) Or dry if its all you have. Add whatever taste you like, oregano, parsley (if you don’t want to add taste but want to add green colour) whatever!

Mix it all together, add a splash of hot sauce like Franks Chile and Lime if you want, pour it into a oven safe dish, and bake until hot (maybe 400F for 15 minutes?)

Serve it with pitas or whatever dip-device you want! You can even serve it unbaked.

You can even decorate it however you want to, fresh grated cheese on top, some herbs, splashes of hot sauce - whatever. Get creative; add spinach, green onion or tomatoes to the mix if you want a change.


This dish takes maybe 10 minutes prep.

You can even do it while company is over! You can also make ahead and refrigerate, even freeze, in a dish so that you just have to pop it in the oven when the time comes.

Now that's how a pilot's wife does it! We know that social events can be last minute because we never know when hubby will be home next. I always keep a big Costco (I think this is called Price Club in the US) size jar of artichoke hearts in my fridge. :)
